Apple Muffins

 

1 ½ cups sifted all-purpose flour                            1 egg

¼ cup whole wheat flour                                       1 cup milk

¾ tsp salt                                                            ½ tsp vanilla

4 tsp baking powder                                             1/3 cup melted shortening or salad oil

 ¼ tsp mace                                                         ¾ cup diced, peeled apples

¼ cup sugar                                                         Granulated sugar

Sift Flour; measure and sift again with salt, baking powder, mace and sugar.  Combine with whole wheat flour.  Beat egg; add milk, vanilla and melted shortening.  Combine with dry ingredients, stirring until just moistened.  Add diced apples.  Fill greased muffin tins 2/3 full.  Sprinkle a little granulated sugar on top of each muffin.  Bake 20 to 25 minutes at 400 ° F or until done.  Yield:  12 muffins.
