Barbecue Salmon

 

1 cup salt                                                                     Syrup Baste:

1 ½ cups sugar                                                        2 tbsp. maple syrup

3 Tbsp. ground pepper                                             2 Tbsp. soya sauce

3 bay leaves                                                           ¼ tsp ground ginger

5 to 6 lb. salmon                                                      ¼ tsp pepper

                                                                               2 to 3 cloves garlic, minced

In 2 quarts of water, dissolve sugar and salt.  Add pepper and bay leaves. Soak salmon in brine for 2 to 3 hours.

Stir together syrup baste.  Baste salmon and put in tinfoil and cook on barbecue until done.
